*Roasted coffee beans can begin to oxidize as soon as 2 weeks after roasting. This process happens even sooner with pre-ground coffee so buy the freshest beans you can find and grind them just before brewing.
*Use the highest quality coffee and fats you can find for the best flavor and nutrition.
*Red palm oil, not to be confused with palm shortening which is refined palm oil, is high in antioxidants A and E in the form of beta-carotene as well as rare tocopherols of the vitamin E family.
1 1/2 cups freshly brewed strong regular or decaf coffee
2 Tbsp. grass fed cream, homemade almond milk or coconut milk
1 Tbsp. coconut oil
1 tsp. red palm oil (see notes above)
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
1 tsp. high quality vanilla extract
2 Tbsp. low carb whipped cream
Place everything, except for whipped cream if using, into the container of a high speed blender and blend on high for 20-30 seconds. A regular blender should work fine too. Top with low carb whipped cream if desired.
